Finally, a place to store the recipes of all the wonderful refreshments you all provide for us when we take over your homes the first Wednesday of each month!

Black Bean Salad

Dressing:
1 small clove garlic
pinch salt, plus 1 1/2 tsp.
Juice of 1 1/2 limes (approx 3 Tbsp.)
1/4 tsp. chili powder
1/4 cup olive oil

*  Press the garlic clove, sprinkle with a pinch of salt, and, with the flat side of a large knife, mash and smear the mixture to a course paste

*  Whisk the garlic paste, lime juice, salt, and chili powder together in a bowl.  Gradually whisk in the olive oil, starting with a few drops, then adding the rest in a steady stream

Salad:
1 cup fresh corn kernals (approx 2 ears, or use frozen)
1 orange bell pepper diced
1/2 small red onion finely chopped (approx 1/4 cup)
1 Tbsp olive oil
1 15 oz. can black beans, drained and rinsed
salt and pepper
1 cup cherry tomatoes, halved
1 small avacado, halved, seeded, and diced
1/4 cup fresh cilantro (leaves and stems), chopped

*  Cook the corn, bell pepper, and onions in the olive oil over medium high heat until beginning to brown

*  Toss in the black beans and cook until warm

*  Add the dressing and toss to coat evenly.  Adjust seasoning with salt and pepper.

*  Remove from the heat and gently fold in the tomatoes, avacado and cilantro.  Serve

Vitaminas (Brazillian Avacado and Banana Smoothies)

In a blender, combine:

1/2 and avacado

2 bananas

1 cup sugar

enough milk and ice to get it to the consistency you like

*  This is VERY sweet, to tone it down a bit you can add a little bit of salt and/or lemon juice if you want.
